Lemon Basil Chicken
Serves 4
You will need:
120ml (4 fluid oz) honey
4 tablespoons lemon juice
1 tablespoon freshly chopped basil
1 clove of garlic, crushed
1/2 teaspoon salt
2 tablespoons grated lemon zest
4 boneless, skinless chicken breasts
Method:
1. Put all of the ingredients apart from the chicken in a bowl and mix well.
2. Add the chicken breasts then cover and refrigerate for at least an hour. Turn during the marinating period.
3. Preheat the oven to 180°C (350°F, gas mark 4). Transfer the marinated chicken to a shallow ovenproof dish and bake
for 35 to 40 minutes or until thoroughly cooked. Garnish with a sprig of basil.
