Citrus and Avocado Salad
This makes a refreshing change from a standby of avocado and tomato salad. You could adapt the recipe and use two small cooked beetroot and the juice of a lime
instead of the grapefruit. This would use three superfoods, i.e. avocado, beetroot and orange, in the same recipe - bonus points there for healthy eating!
Serves 6
You will need:
3 x 15cm (6in) tortillas
3 medium oranges
2-3 grapefruits
3 ripe avocados
2 tablespoons honey
2 tablespoons raspberry vinegar
Sprigs of fresh mint
Method:
1. Slice the corn tortillas into very thin strips. Dry them by placing on a baking sheet and putting in a very cool oven 110°C (225°F, gas mark 1/4) for approximately 15 minutes. Leave to cool.
2. Grate the orange rind to obtain approximately 2 teaspoons of orange rind for each serving. Peel the oranges and grapefruits, pull into segments and remove the pips. Prepare the avocados by removing skin and stones and cutting into slices lengthways.
3. In a large bowl mix the honey, raspberry vinegar, orange and grapefruit sections. Add the orange rinds and tortilla strips. Toss all of the ingredients gently. Top with avocado slices and a sprig of fresh mint for garnish.
