Honey Flapjacks 
You will need:
200g (7oz) butter
200g (7oz) demerara sugar
200g (7oz) honey
400g (14oz) porridge oats
50g (2oz) nuts, dried fruits, glacé cherries, chopped or desiccated coconut (optional)
Method:
1. Heat the butter, sugar and honey until the sugar has dissolved.
2. Add the oats and nuts, fruit or coconut and mix well.
3. Place in a greased Swiss roll tin or cake tin and spread to about 2cm (¾in) thick.
5. Bake in a preheated oven at 180°C (350°F, gas mark 4) for 15 to 20 minutes, until golden around the edges, but soft in the middle. Let it cool in the tin, then turn out and cut into squares.
