Honey Fruit Cake Suitable for Vegetarians

A wonderful fruity treat for a birthday, christmas or any occasion!

You will need:

86g of Caster Sugar

113g of Margarine

2 Large Eggs

170g of Plain Flour

113g of honey

1 teaspoon of Baking Soda

2 teaspoons of Mixed Spice

454g (1lb) of Mixed Fruit (Cherries, Sultanas, Raisins, etc.)

1/2 teaspoon of Lemon Juice

A pinch of Salt

You will also require Milk (Use Whole Milk for best results)


Method:

1. In a large bowl mix the margarine, sugar and honey until smooth and creamy.
2. Sieve the flour, baking powder and mixed spice into the mixture.
3. Add both eggs and beat the mixture well until the mixture is uniform and smooth.
4. Now add the mixed fruit, lemon juice and a little bit of milk. Add a little milk at a time until you achieve a fairly soft and light consistency - be careful not to add too much.
5. Put the mixture in a large cake tin lined with greased paper (use baking parchment and some extra margarine). We recommend a 7 inch square baking tin.
6. Bake at 180°C for between 1 hour to 1 hour 15 mins. Place some baking parchment on top of the cake for the final 15 mins if the cake appears to be browning rapidly.
7. Allow the cake to cool, and decorate or eat as it is with a nice cup of tea!
