Orange-Honey Marinade
The easiest way to make this marinade is to use a clean, screw-topped jar in which to mix the ingredients in.
Leftovers can be kept in the fridge, in most cases, for some weeks, unless dairy products are involved.
The honey you use can make all the difference to the flavour, so decide carefully which variety to use.
On removing the marinade from the fridge it will look cloudy, but don't worry: let it reach room temperature and shake again.
This particular marinade is very spicy!
You will need:
6 tablespoons honey
6 tablespoons soy sauce
275ml (10 fluid oz) orange juice
3 tablespoons water
150ml (5 fluid oz) dry white wine
1 teaspoon mustard
1 teaspoon paprika
1/2 teaspoon allspice
1 clove of garlic, crushed
1/4 teaspoon tabasco sauce
Method:
Combine all the ingredients and leave to stand for at least 20 minutes to allow the flavours to develop. Use to marinate pork or chicken. It will also spice up vegetables in a stir-fry.
