Honeyed Quorn Chilli
If you are not vegetarian you could easily substitute the quorn for lean minced beef. Alternatively, for a healthier meat option, use turkey mince, which is much better for you.
Serves 6
You will need:
1 pack quorn mince
1 tablespoon vegetable oil
1 chopped onion
1 chopped green pepper
2 cloves of garlic, finely chopped
1-2 tablespoons chilli powder (according to taste)
1 teaspoon ground cumin
1 teaspoon salt
1/2 teaspoon dried marjoram
1 large or 2 standard tins tomatoes, undrained
1 tin red kidney beans, washed and drained
2 tablespoons tomato purée
4 tablespoons honey
2 tablespoons red wine vinegar
Method:
1. In a large saucepan, heat the oil over a medium heat. Cook the onion, green pepper and garlic for 3 to 5 minutes, until the vegetables are beginning to brown.
2. Stir in the chilli powder, cumin, salt and marjoram. Stir in the quorn, cook and stir for 1 minute.
3. Stir in diced tomatoes, kidney beans, tomato purée, honey and vinegar. Bring to the boil, reduce heat and simmer, uncovered, for 15 to 20 minutes, stirring occasionally.
