Brown Rice Pudding
This has the goodness of added fibre. You can serve it with fruit such as raspberries, blueberries or even sultanas.
Serves 6
You will need:
110g (4oz) brown rice
2 large eggs
80ml (3 fluid oz) honey
Pinch of salt
350ml (12 fluid oz) skimmed milk
Nutmeg or cinnamon
Method:
1. In a saucepan, bring the rice and milk to the boil. Cover, reduce heat and simmer until the rice is tender (about 45 minutes).
2. Preheat the oven to 180°C (350°F, gas mark 4). Beat together the eggs, honey and salt and stir into the hot rice.
3. Pour into a baking dish, sprinkle with nutmeg or cinnamon. Set the dish in a pan of hot water. Bake for about 50 minutes or until set. Cool. Top each serving with desired accompaniments.
